Banana Bread with Walnuts

Ingredients

Squeaky Gate The Mild One Extra Virgin Olive Oil for greasing
2 large ripe bananas, peeled
2 eggs
1/3 cup Squeaky Gate The Mild One Extra Virgin Olive Oil
1 cup dark brown sugar
2/3 cup walnuts
1 ½ cups self-raising flour
2 teaspoons mixed spice

Method

Grease a loaf pan with Squeaky Gate The Mild One Extra Virgin Olive Oil and line with baking paper. Mash bananas in a large bowl and mix in eggs and Squeaky Gate The Mild One Extra Virgin Olive Oil. Stir in brown sugar and walnuts. Fold in flour and mixed spice. Pour into loaf pan and bake at 180°C for 30-40 minutes until golden brown and cooked through. Turn out onto a wire rack to cool and serve warm, cut into slices or toasted with butter.
