Pulled Pork Hash

Serves 2
Preparation time 15 minutes
Cooking time 15 minutes

Ingredients

200g pulled pork
1/2 red onion- diced
1/2 red pepper- diced
1/2 green pepper-diced
1 medium sweet potato- diced
1 garlic clove- crushed
2 sprigs thyme- deleafed
1tsp chili flakes
1tsp parsley- chopped garnish
1/2tsp ginger- finely chopped
1tbsp Squeaky Gate All Rounder EVOO
2 eggs
Mayo or Aioli
Salt & pepper

Method

Heat oil in frying pan on medium/high heat.
Fry sweet potatoes for 2-3min
Add peppers, onion, garlic, chili flakes, ginger, thyme, salt & pepper to frying pan and cook for approx. 2-3min.
Heat 2nd frying pan on medium heat with a dash of oil and fry the eggs.
Add pulled pork to vegetables mix andcook for a further 2-3mins.
To serve, place a dollop of mayo on plate, spoon the hash, top with friend egg and sprinkle of parsley.
